Ingredients: 3 large eggs Salt & black pepper to taste 1/4 cup diced red bell pepper 1/4 cup sliced mushrooms 1/2 cup fresh spinach 1/4 cup shredded mozzarella or melting cheese 1 tbsp chopped parsley 1 tsp butter or olive oil Optional: red chili flakes for heat Instructions: Whisk Eggs: Beat eggs with salt and pepper. Cook Veggies: In a non-stick pan, sauté mushrooms and bell pepper in butter for 2 mins. Add spinach, cook until wilted. Make Omelette: Pour eggs over veggies, tilt pan to spread evenly. Cook on low until nearly set.

Add cheese & Fold: Sprinkle cheese, fold omelette gently. Cook 1 more min to melt

Serve: Garnish with parsley and chili flakes
