For the Roll: 1 cup cooked sushi rice 1 sheet nori ½ cup tempura chicken or tofu ¼ cucumber, julienned Baby spinach or lettuce 1 tbsp sesame seeds Oil (if frying whole roll) Dipping Sauce: ¼ cup mayo 1 tbsp soy sauce 1 tsp rice vinegar 1 tsp chopped chives or green onion Optional: dash of wasabi or sriracha Instructions: Assemble: On a bamboo mat, layer nori, rice, chicken/tofu, cucumber, greens, and sesame seeds. Roll & (Optional) Fry: Roll tightly. For extra crunch, dip in tempura batter and deep-fry until golden

Slide: Cool briefly. Slice into 6-8 pieces (freeze 5min for cleaner cuts)

Sauce: Mix sauce ingredients until smooth
