My absolute fav blueberry muffin recipe 💙🫐

Ingredients

-2 c flour

-1 c sugar

-2 tsp baking powder

-a pinch of salt

-2 large eggs

-1 c vanilla Greek yogurt

-1/2 c canola oil

-1 tsp vanilla

-1 c fresh blueberries (+ more for topping)

Streusel:

-1 c flour

-2/3 c sugar

-1 tsp cinnamon

-1/2 c salted butter, melted

How to:

1. Preheat oven to 400

2. Combine dry ingredients in a bowl, whisk together. Add in the eggs, yogurt, oil, and vanilla. Then, mix till combined. Batter will be thick.

3. In a separate bowl, coat 1 c blueberries in a tbsp of flour. Add them to your batter and gently fold them in.

4. In small bowl, add flour, sugar and cinnamon for your streusel topping. Mix to incorporate. Pour in the melted butter and mix with a fork till crumbly. Let cool slightly, then break up the big chunks with your fingers to reach desired crumbliness.

5. Line your muffin pan and fill cups about 3/4 full. I use a cookie scoop and do a hefty scoopful. There should be enough for 18 muffins.

6. Top off with extra blueberries. (3-4)

7. Finish with a generous amount of streusel. Bake for 18-20 minutes

8. Let cool for a minute or two and enjoy!
