Prep these delicious bowls in just a few steps, and you'll have nourishing meals ready for the week.🥢🍤
Ingredients for 4 serves:
200g mushrooms, sliced
1 broccoli, chopped
1 capsicum, thinly sliced
100g snow peas, sliced
400ml light coconut milk
2 Tbs Thai green curry paste
1 chicken stock cube (salt-reduced)
2 Tbs light soy sauce
2 Tbs fish sauce
300g peeled prawns (600g unpeeled)
2 nests thick egg noodles
2 spring onions, diced
Coriander & lime to serve
Steps:
1. Preheat oven to 180°C. In 4 glass bowls, add mushrooms, broccoli, capsicum, snow peas, and coconut milk.
2. Fill the coconut milk tin with water and pour into bowls. Add curry paste, stock cube, soy & fish sauces. Mix gently.
3. Add prawns & noodles to each bowl. Cover with foil.
4. Place bowls on a baking tray and bake for 25-30 minutes or until cooked. Top with spring onion, coriander, and lime.
