4.8 lbs fresh pineapple
5 cups sugar 1 lb strawberry
64grams Jalepeno
1/2cup lemon
Put in a deep pot
1.Mix your sugar into your fruit and let it sit until it sweats
2.Then put it on the stove on high heat add your lemon if you want smaller pieces blend it a little bit while it's on the stove with an emulsifier I blended mine with only pineapples and jalepenos for a second first and then I added my strawberries after so they would stay in pieces better i like the texture difference.
3.Get it to the rolling boil .
4.Boil it for 25 minutes do not stop stirring to not burn it be careful you may have the jam get on you wear long sleeves or cover arms.. get the mix to 220 thats the temperature that causes it to jam.
Let fully cooled before refrigeration.
