Afternoon Treat
Little afternoon treat!
Made a homemade sushi bowl with jasmine white rice, smoked salmon, cooked sashimi (in eel sauce), carrots, zucchini, scallions, cream cheese and drizzled in eel sauce.
Homemade Eel Sauce:
INGREDIENTS:
Mizkan brand mirin - 1 cup
Kikkoman soy sauce - 1 cup
Brown sugar - 1/2 cup
DIRECTIONS:
in a large pot bring 1 cup of mirin and 1/2 cup of brown sugar to a light boil, turn the heat down to “3” then slowly add the soy sauce. Bring to a boil at level “5” then put on simmer for about 3 to 5 minutes.
Optionally transfer into a glass container and store in the fridge for up to 3 weeks.
I used jasmine rice in my Aroma rice cooker. I typically make 1 cup of rice which requires 2 cups of water and then I select the “white rice” setting on the rice cooker.
When the rice is finished I transfer some to a bowl and top with the remaining ingredients as well as eel sauce to taste.
All ingredients are optional of course. I chose zucchini instead of cucumber because I don’t care for the taste of cucumbers.
For the cooked sashimi I use the crab selects imitation crab meat and place in a small pan over medium heat with about a tablespoon of butter and let simmer until a little browned then flip the fish pieces over and add a drizzle of eel sauce (or old bay if just cooking sashimi without the rest of the sushi bowl).
One pot of rice in the rice cooker usually makes about 3 servings depending on how hungry I am. You can double the recipe to feed a family.
