Monthly Menu: Creamy Chicken Florentine

This creamy Chicken Florentine recipe features tender chicken breast pieces simmered in a rich, spinach-filled Florentine sauce. Ready in just 20 minutes, it's the perfect meal for a busy weeknight!

Cook Time: 20 minutes

Total Time: 25 minutes

Ingredients:

- 2 large chicken breasts

- 1/2 teaspoon salt

- 1/2 teaspoon pepper

- 1/2 cup almond flour or all-purpose flour

- 2 tablespoons parmesan cheese

- 1 tablespoon olive oil

- 1 tablespoon butter

For the Florentine Sauce:

- 1 tablespoon butter

- 2 cloves garlic, minced

- 3/4 cup chicken broth

- 1 tablespoon Italian seasoning

- 1 cup heavy cream

- 1/4 cup parmesan cheese

- 2 cups baby spinach, loosely packed

Instructions:

1. Slice the chicken breasts lengthwise to create four thin pieces. Season with salt and pepper and set aside.

2. In a small bowl, mix the almond flour and parmesan cheese. Dredge each chicken piece in the flour mixture, ensuring they are fully coated.

3. Heat the olive oil and one tablespoon of butter in a skillet over medium heat. Once hot, add the chicken and cook for 8-10 minutes, flipping halfway through, until golden brown. Remove the chicken from the skillet.

4. Add the remaining butter to the skillet along with the minced garlic. Cook for 30 seconds before adding the chicken broth and Italian seasoning. Let it simmer.

5. Stir in the heavy cream and parmesan cheese, allowing the sauce to thicken for a few minutes.

6. Add the baby spinach to the skillet, stirring until it wilts and is well incorporated into the sauce.

7. Return the chicken to the skillet, spooning some sauce over the top. Let it simmer for an additional 2-3 minutes to ensure the chicken is heated through.

8. Serve the Chicken Florentine hot, with the creamy spinach sauce generously spooned over the top.
