Cottage Cheese & Butternut Squash Lasagna

Ingredients:

* 2 cups butternut squash, cubed

* 1 cup cottage cheese

* 9 lasagna noodles, cooked

* 1 cup ricotta cheese

* 2 cups marinara sauce

* 1 cup shredded mozzarella cheese

* 1/2 cup grated Parmesan cheese

* 1 egg

* 2 tablespoons olive oil

* Salt and pepper to taste

* Fresh basil for garnish

Instructions:

1. Preheat oven to 375°F (190°C). Toss butternut squash with olive oil, salt, and pepper. Roast for 25-30 minutes, until tender.

2. In a bowl, combine cottage cheese, ricotta cheese, egg, and half of the Parmesan cheese.

3. In a baking dish, spread a thin layer of marinara sauce. Place three lasagna noodles on top.

4. Spread half of the cottage cheese mixture over the noodles, then add half of the roasted butternut squash. Repeat layers.

5. Top with the remaining noodles, marinara sauce, and mozzarella cheese. Sprinkle with the remaining Parmesan cheese.

6. Bake for 30-35 minutes, until bubbly and golden.

7. Garnish with fresh basil and serve.
