Ingredients

Dough:

• 4 cups bread flour

• 1 pack (2 1/4 tsp) active dry yeast

• 1/2 cup sugar

• 1 cup warm milk

• 2 eggs

• 1/2 teaspoon salt

• 1/2 cup unsalted butter, melted

Yeast Proofing:

• 1/4 cup warm water

• 1 tablespoon sugar

Filling:

• 2 tablespoons cinnamon

• 1/2 cup unsalted butter, softened

• 1 cup brown sugar

Cream Cheese Frosting:

• 4 oz cream cheese

• 1/4 cup unsalted butter, room temperature

• 1 cup confectioners’ sugar

• 2 teaspoons vanilla extract

• Pinch of salt

Instructions

1. Proof the Yeast

• In a small bowl, mix warm water and 1 tablespoon of sugar.

• Add the yeast, stir, and let it sit for about 5–10 minutes until it becomes foamy.

2. Make the Dough

• In a large mixing bowl, combine bread flour, sugar, and salt.

• Add warm milk, eggs, melted butter, and the proofed yeast.

• Knead the dough for about 10 minutes until smooth and elastic.

3. First Proofing

• Preheat the oven to 200°F (93°C) and then turn it off.

• Place the dough in a greased bowl, cover, and let it rise in the warm oven for 2–3 hours (or 1 hour if you’re in a hurry) until doubled in size.

4. Prepare the Filling

• Mix softened butter, brown sugar, and cinnamon until smooth.

5. Shape the Rolls

• Roll the dough into a ¼-inch thick rectangle on a floured surface.

• Spread the cinnamon filling evenly over the dough.

• Roll it up tightly from the long side and cut into 12 equal rolls.

6. Second Proofing

• Arrange the rolls in a greased baking dish.

• Preheat the oven to 200°F again, then turn it off.

• Let the rolls rise for 45 minutes to 1 hour (or 30 minutes if you’re in a hurry) until puffy.

7. Bake the Rolls

• Preheat oven to 350°F (175°C).

• Bake for 20–25 minutes, until golden brown but still soft in the center.

8. Make the Frosting

• Beat cream cheese and butter until smooth.

• Add confectioners’ sugar, vanilla, and salt, mixing until creamy.

9. Frost and Enjoy!

• Let the rolls cool slightly, then spread the frosting generously on top.

• Serve warm and enjoy every gooey, fluffy bite!
