It's become a staple in my household, especially on those busy weeknights when I just don't have a lot of time but still want a delicious, home-cooked meal. What I love most about this onion boil with sausage is its simplicity and versatility. You really can’t mess it up! It’s one of those comforting dishes that reminds me of lazy Sunday afternoons, even when I'm whipping it up on a Tuesday. The sweetness of the cooked onions combined with the savory, juicy sausage creates an amazing flavor profile that's just irresistible. So, how do I make my go-to onion boil w/sausage? It starts with good quality ingredients. For the sausage, I usually go for a smoked sausage like kielbasa or a spicy Italian sausage if I want a little kick. Just slice it into bite-sized pieces. As for the onions, I prefer yellow or Vidalia onions because they caramelize beautifully and add a wonderful sweetness to the boil. I chop them into thick wedges so they hold their shape. The process is super straightforward. I usually start by sautéing the sausage slices in a large pot or Dutch oven until they're nicely browned. This step really brings out their flavor.
