• 1 teaspoon vanilla essence (sometimes I just chuck in a spoonful lol)
• chopped walnuts
• Pinch of salt (optional)
Method:
1. Preheat oven to 180°C and grease/line a loaf tin.
2. Mix egg, sugar, melted butter and vanilla essence together.
3. Stir in mashed feijoas.
4. Add self-raising flour and gently fold until just combined.
5. Fold through walnuts.
6. Pour into loaf tin and smooth the top.
7. Bake for 45–55 mins or until a skewer comes out clean.
8. Let cool slightly before slicing… if you can wait 😏
You can add sugar on top or more walnuts.
