PS- I’m working on a gluten free bread recipe & when I perfect it I’ll let everyone know! This one’s pretty good (even though I’ve squashed it to make a piece of toast 😅) all the previous ones weren’t squishable so that’s progress!

From my ongoing attempts, I’ve learned that achieving the ideal texture—especially one that’s soft and squishable—is key to enjoying gluten-free toast. Unlike traditional bread, gluten-free dough often requires a mix of alternative flours like rice flour, almond flour, or tapioca starch to mimic gluten’s elasticity. One helpful tip I've discovered is experimenting with hydration levels. Adding enough moisture can make your dough less crumbly and easier to shape. Ingredients like xanthan gum or psyllium husk powder also help bind the bread, improving its softness and texture. During baking, paying close attention to temperature and time ensures a well-cooked loaf that remains moist inside. In my experience, persistence is essential. Earlier batches felt too dry or crumbly to toast well, but with tweaks and patience, I've managed to create bread that withstands toasting without turning hard. Sharing these trials and successes is part of what makes gluten-free baking fulfilling. I'm excited to keep refining my recipe and hope to share a perfected version soon for everyone looking for a delicious, squishable gluten-free bread option.
