Philly Cheesesteak Pasta

I've been on a pasta kick lately, with it being 14° out during the day, but there is no reason the carbies in my life have to follow suit. There are so many options for high protein pasta made from chickpeas or lentils, and my favorite replacement is still a simple roasted vegetable….the spaghetti squash. All of these options are also gluten-free.

If celiac has taught me anything, it's that there is a substitute for everything. Sometimes you have to be creative or open-minded.

Cheesesteak sandwiches were a weakness of mine, especially before my diagnosis. Making the sandwich into a pasta seems like a genius move.

Ingredients :

- 8 oz gluten-free pasta (try roasting spaghetti squash)

- 1 lb thinly sliced beef (ribeye or sirloin works best)

- 1 TB olive oil

- 1 small onion, diced

- 1 small green bell pepper, diced

- 1 small red bell pepper, diced

- 2 cloves garlic, minced, or a metric ton of Jarlic, we don't judge

- 1 cup beef broth(use what you have on hand)

- 1 cup heavy cream, dairy-free heavy cream, coconut cream, or even lactose-free milk works

- 1 TB gluten-free Worcestershire sauce

- 1 cup fresh provolone cheese, shredded

- 1/2 cup fresh mozzarella cheese, shredded

- Salt & pepper to taste

Garnish

- Fresh parsley, for garnish (optional)

Directions :

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Drain and set aside.

Cook the Beef: In a large skillet, heat olive oil over medium heat. Add the sliced beef and cook until browned, about 4-5 minutes. Remove the beef from the skillet and set it aside.

Sauté the Vegetables: In the same skillet, add the diced onion, green bell pepper, red bell pepper, and garlic. Sauté until softened, about 5 minutes.

Make the Sauce: Pour in the beef broth, heavy cream, and Worcestershire sauce. Stir well and bring to a simmer. Stir in the provolone and mozzarella cheese until melted, and the sauce is creamy.

Combine: Add the cooked pasta and beef back into the skillet. Toss everything together until well coated in the sauce. Season with salt and pepper to taste.

Garnish: Sprinkle with fresh parsley if desired and serve hot.
