CREAMY GARLIC PARMESAN CHICKEN WITH MACARONI
Ingredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
2 tablespoons olive oil
1 tablespoon Cajun seasoning
1 teaspoon smoked paprika
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese
1/2 pound elbow macaroni
4 tablespoons butter
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and black pepper to taste
Chopped green onions, for garnish
Directions:
1. Cook the macaroni according to package directions. Drain well and set aside.
2. In a large skillet, heat olive oil over medium-high heat. Add chicken cubes, Cajun seasoning, and smoked paprika. Cook until chicken is golden brown and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
3. In the same skillet, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in milk until there are no lumps. Bring to a simmer, stirring constantly.
4. Reduce heat to low. Stir in garlic powder, onion powder, salt, and pepper. Simmer for 5 minutes, or until sauce has thickened.
5. Stir in heavy cream, Parmesan cheese, and mozzarella cheese until melted and smooth.
6. Add cooked macaroni and chicken to the cheese sauce. Stir to combine.
7. Simmer for another 2-3 minutes, allowing the flavors to meld together.
8. Serve immediately, garnished with chopped green onions.

Creamy Garlic Parmesan Chicken with Macaroni is a delicious comfort food that's sure to please the family. This dish is not only rich in flavor but also relatively easy to prepare. To enhance the flavor, consider marinating the chicken in Cajun seasoning overnight for an even deeper taste. When cooking the macaroni, ensure it’s al dente before combining it with the chicken and sauce to prevent it from getting mushy. Here are a few tips to ensure success: always whisk the flour thoroughly with the butter to avoid lumps in the sauce. Adding the chicken broth helps in achieving a smoother texture in your cheese sauce. For a twist, you can include vegetables like spinach or peas for added nutrition and color. If you're looking to reduce calories, you can substitute half-and-half for the heavy cream and reduce the amount of cheese used. This dish not only makes for a comforting main course but also reheats well, making it perfect for meal prep or leftovers. Enjoy this creamy, cheesy delight that's perfect for any night of the week!
