Garlic Herb Shrimp & Veggie Skewers
Ingredients
1 lb large shrimp, peeled and deveined
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 small onion, cut into wedges
1 cup Brussels sprouts, halved
3 tbsp olive oil
3 cloves garlic, minced
1 tsp Italian seasoning
1 tsp paprika
½ tsp black pepper
½ tsp salt
1 tbsp chopped fresh parsley
Wooden or metal skewers
Instructions
1. If using wooden skewers, soak them in water for 30 minutes.
2. In a bowl, combine olive oil, garlic, Italian seasoning, paprika, salt, pepper, and parsley.
3. Add the shrimp and vegetables to the marinade and toss until evenly coated. Let marinate for 15–20 minutes.
4. Thread the shrimp, bell peppers, onion, and Brussels sprouts onto skewers, alternating ingredients.
5. Preheat a grill or grill pan to medium-high heat.
6. Grill the skewers for 8–10 minutes, turning occasionally, until the shrimp are pink and lightly charred and the vegetables are tender.
7. Remove from the grill and let rest for 2 minutes.
