Didn't have Safe Catch Elite Pure Tuna nearby so I got Wild Planet SkipJack which also has been tested for mercury and has the lowest mercury tuna out there. It too is 10x lower in mercury than the FDA action requirement.
Inqredients:
. 2 cans Wild Planet SkipJack Tuna drained to
• 1 cup cooked sushi rice, cooled
• 2 avocados (depending on the size of your pan 😅. thinly sliced
. 1 carrot, verv thinly sliced or julienned
• 1 large cucumber, thinly sliced
. 2-3 tbsp mayo
. 1-2 tsp lemon juice
• 1 green onion, finely chopped
• Salt and pepper to taste
For topping
• Yum Yum Sauce (See profile for recipe video)
• Tamari Soy sauce (gluten free)
• Black or white sesame seeds
Highly recommend - will definitely be trying this again with the right rice - and maybe with some salmon instead of tuna!
