... Read moreHey foodies! I'm so excited to share how I make my absolute favorite High Protein Creamy Cajun Steak & Parmesan Potatoes. This recipe is a game-changer for anyone looking for a delicious, hearty meal that's also super easy to meal prep and packed with protein. I promise, you won't believe how much flavor is in every bite, and it's surprisingly light! The stars of this dish are definitely the steak and the creamy parmesan potatoes. For the steak, I use 1000g of Topside Beef, cut into easy-to-manage cubes. Seasoning is key here! I go with a mix of Salt, Italian Herbs, Chilli Flakes, Garlic & Onion Powder, and Paprika, all coated with a drizzle of Olive Oil. Mix it up until the color changes – that's how you know it's ready for cooking. For the potatoes, I use 900g of white potatoes, cut into small cubes. Don't forget your veggies! Red Onion, Broccoli, and Bell Pepper, all chopped and diced, add so much flavor and nutrition. For the potato seasoning, I love using Italian Herbs, Garlic Powder, Paprika, and Parsley, with lots of Parmesan cheese. Mix it all well together! Once everything is seasoned, it's time to cook. You can either oven bake or air fry your potatoes and veggies. I usually do 20-24 minutes at 180C/360F until they're golden and perfectly roasted. They come out so crispy and delicious! While the potatoes are cooking, get your steak bites ready. Cook them in a bit of Light Butter over medium-high heat for 3-4 minutes each side, until they're golden and beautifully seared. For an extra punch of flavor, I always add Extra Minced Garlic and Fresh Parsley towards the end. Mix it till it's juicy and delicious, then set aside. Now for the magic – the creamy sauce! In a pan, toast some Extra Seasoning (Salt, Italian Herbs, Garlic & Onion, Paprika, Parsley) in Extra Light Butter for about 2 minutes. Then, pour in 250g of Milk and stir in 150g of Light Cream Cheese and 40g of Grated Parmesan. Keep stirring until it's smooth and melted. This sauce is incredibly creamy and rich in flavor, and it really brings the whole dish together. Finally, combine your cooked steak, potatoes, and the creamy sauce. Mix everything gently, and it's ready to SERVE & ENJOY! What I love most about this recipe is not just the taste, but also the fantastic macros. Each serving is only 578 Calories, with an impressive 62g Protein, 44g Carbs, and just 17g Fat. It's truly a guilt-free indulgence that keeps you full and satisfied. This makes meal prepping a breeze, as you can easily portion it out for the week. Seriously, SAVE THIS RECIPE! It's become a staple in my healthy eating journey.
