Using roasted fresh tomatoes adds a deep, caramelized flavor that canned tomatoes just can't match. The roasting process brings out natural sweetness and enhances the savory taste, especially when combined with garlic, thyme, and fresh basil, which complement each other perfectly. Blending the roasted ingredients until smooth creates a velvety texture. Adding vegetable broth helps customize the thickness, so you can make it as rich or light as you prefer. Crushed red pepper adds a subtle heat that balances the creaminess of the soup, while a splash of heavy cream rounds out the flavors and adds indulgence. Pairing the soup with a grilled cheese using smoked cheddar is a game changer— the smoky note from the cheese adds complexity and pairs nicely with the tomato's acidity. For an extra twist, you could experiment with adding herbs like oregano or a pinch of smoked paprika to the soup for a smoky undertone that echoes the cheese. This recipe is straightforward and forgiving, ideal for beginners who want a cozy homemade meal without fussing over precise measurements. Simply roast, blend, season, simmer, and enjoy. Plus, it’s a great way to use up fresh tomatoes from the garden or farmers’ market during the peak season. Don’t forget to save this recipe for chilly weekends — it’s satisfying, full of flavor, and pairs perfectly for comforting lunch or dinner. Whether you enjoy it as a classic pairing or customize with your favorite bread or cheese, this roasted tomato soup with grilled cheese is a delicious way to warm up.
