Instructions

1. Marinate and Cook the Chicken

• Blend the chipotle peppers, adobo sauce, garlic, cumin, oregano, lime juice, olive oil, and salt into a paste.

• Coat the chicken with the marinade and let it sit for at least 30 minutes (or up to 2 hours for more flavor).

• Heat a large skillet or grill pan over medium-high heat. Cook the chicken for 5-7 minutes per side until charred and cooked through (internal temperature 165°F).

• Let it rest for 5 minutes, then chop into bite-sized pieces.

2. Prepare the Cilantro-Lime Rice
