Elote Gnocchi

*Inspired from Delish*

I changed the ingredients and added some things:

The recipe that follows is for a family of 4 adults with some leftovers, but feel free to modify how you see fit 🫶

Super simple, with just a scant amount of prep work this is one of those dinners where the oven does all the work, but it looks like you did! ⭐️✨️

2-16oz Packages Shelf Stable Gnocchi

2- 16oz packages Frozen Corn* (yes, canned corn will work)

2- Cups Cotija Cheese*( this you can measure with your heart, but 2 cups for this amount should give you nice coverage )

1- Bunch Cilantro

1.5 lbs washed and diced Mushrooms (I used Cremini)

1/2 Cup Avocado Oil (Olive oil works as well)

1 Tbsp Garlic Powder*

1 Tbsp Smoked Paprika*

1.5 Tbsp Onion Powder*

1 Tbsp Tajin*

1.5 Tbsp Cumin*

1.5 Tbsp Salt

.5 Tbsp Chili Powder

Juice and Zest from 1 Lime

Dressing:

1/4 Cup Greek Yogurt

1/8 Cup Mayo

1/4 Cup Sour Cream

Juice and Zest from 1 Lime

* The seasonings are really to tase- use more or less depending on your pallet and families taste, but these measurements are a good baseline.

Directions

Step 1

Cut Mushrooms into slices and get into sauté pan.

season with 2-3 Tbsp oil and cook until all the water is evaporated from them.

Season them with 1/2 Tbsp from all the seasonings listed above- set aside.

Arrange a rack in center of oven; preheat to 425°. In a large bowl, toss corn, gnocchi mushrooms, and oil; season with 1/2 tbsp all seasonings- and toss again. Spread corn mixture onto foil lined baking sheet.( I used 2 because its important they're spread out in a single even layer so the gnocchi can crispy up.

Step 2

Roast gnocchi until soft inside and crispy outside, and corn is tender, 20 to 25 minutes.

Step 3

Meanwhile, in a small bowl, stir sour cream, greek yogurt, mayonnaise, lime juice and zest, and 1/2 Tbsp. salt, Cumin and Onion powder.* (Again, these are all to taste so adjust accordingly)

Step 4

Remove baking sheet from oven and toss gnocchi mixture with cotija and cilantro. Drizzle with crema mixture and top with more cotija and chili powder. Serve with lime wedges alongside.

I also used some goat cheese and it came out wonderful.
