* 12 oz cavatappi or elbow macaroni
* 2 tbsp butter
* 2 tbsp all-purpose flour
* 2 cups whole milk
* 1 cup heavy cream
* 2 cups sharp cheddar cheese, shredded
* 1 cup smoked gouda, shredded
* 1 ripe mango, diced
* 6 slices bacon, cooked and crumbled
* 1 tsp chipotle powder
* ½ tsp smoked paprika
* Salt & black pepper, to taste
* Chopped chives
* Optional: Panko breadcrumbs for topping

👨🍳 Directions
1️⃣ Roast the Mango
Preheat your oven to 425°F (220°C). Spread the diced mango on a baking sheet and roast for 10–12 minutes, until lightly caramelized.
2️⃣ Cook the Pasta
Boil the pasta in salted water until just al dente. Drain and set aside.
3️⃣ Make the Cheese Sauce
In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Slowly whisk in the milk and heavy cream until smooth. Stir in the cheddar, smoked gouda, chipotle powder, smoked paprika, salt, and pepper until the sauce is silky and creamy.
