🫶🏾✨️and there you go. Matcha Hemp Seed Muffins.

Here's a mistake I made during this bake trying to be fancy...do not...and I mean DO NOT sprinkle the matcha on top of the muffins with the hemp seeds. When you bake, it'll turn to ash, and Ash doesn't taste that good. You could definitely try to sprinkle it on after the bake.

Happy baking ☺️!!!

... Read moreOkay, so you've seen the recipe for these incredible matcha hemp seed muffins, and maybe you're wondering what makes them so special, or perhaps you just want a few more tips to make sure yours turn out perfectly. Let me share a bit more about why these 'grüne muffins' (green muffins!) are a personal favorite and how you can get the best results! First off, let's talk about the stars of the show: matcha and hemp seeds. Matcha isn't just for lattes anymore! It brings this beautiful, natural green color to the muffins, which is probably why folks are searching for 'grüne muffins' – they’re visually appealing and taste amazing. Beyond the color, matcha offers a unique earthy flavor that pairs wonderfully with the sweetness, plus it's packed with antioxidants for a little health boost. I love how it gives these muffins a sophisticated, yet comforting, taste without being overpowering. It’s definitely part of that 'soft girl vibes' feeling I get when I bake with it! Then there are the hemp seeds. These tiny powerhouses are fantastic for adding a subtle nutty crunch and a dose of healthy fats (omega-3s!) and protein. They really elevate the texture of these baked matcha hemp seed buttermilk muffins. You can see them clearly sprinkled on top in the pictures, and they just add that extra something. If you're looking to make your muffins a bit more wholesome without sacrificing flavor, hemp seeds are definitely the way to go. They’ve become a staple in my kitchen, and I usually have them on hand right alongside my all-purpose flour, sugar, matcha powder, baking powder, salt, butter, buttermilk, egg, and vanilla extract for baking days. Now, for some extra tips to ensure your muffins are as perfect as mine! While the recipe is super straightforward, a few small details can make a big difference. When you're mixing your dry ingredients (flour, sugar, matcha, baking powder, salt) and wet ingredients (melted butter, buttermilk, egg, vanilla), remember the golden rule: do not overmix. Overmixing develops the gluten too much, leading to tough, chewy muffins instead of light and fluffy ones. Just combine until the streaks of flour disappear. That's it! This is crucial for getting that soft texture. Also, a little trick I learned: make sure your buttermilk and egg are at room temperature. It helps them emulsify better with the melted butter, resulting in a smoother batter and a more uniform bake. If you don't have buttermilk, you can easily make your own by adding a tablespoon of lemon juice or white vinegar to regular milk and letting it sit for 5-10 minutes until it slightly curdles. It works like a charm! Remember my little mishap with sprinkling matcha on top before baking? Yeah, learn from my mistake! As the unbaked matcha muffin batter bakes, if you sprinkle matcha directly on top, it turns into a bitter, dark ash. Not tasty at all! If you love the look of matcha powder on your muffins, wait until they've cooled completely after baking, and then dust a little on top. It gives them a professional finish and keeps the flavor pure. For a different topping, sometimes I'll add a few white chocolate chips or even a tiny drizzle of a simple vanilla glaze after they've cooled. They make for such a delightful morning treat or an afternoon pick-me-up. Happy baking!
