Eggless Oatmeal Cookies recipe!! 🍪

Hello, hello lemon8!! It's been a while. I'm so glad to post on here. It's such a positive vibe. I love baking because it helps me focus and relax💆🏾‍♀️. That's most home economics, though. Something about it is just therapeutic when it goes right!!

Here's my oatmeal cookie recipe✨️. It's very warm and buttery and just filled with love!

Ingredients:

•160g all-purpose flour

•60g rolled oats

•3g baking soda

•3g salt

•115g unsalted butter, softened

•90g white granulated sugar

•120g brown sugar

•60g apple sauce (unsweetened)

•5g vanilla extract

Optional: nuts (walnuts, pecans), chocolate chips, or worst version of grapes (rasin haters stand up)

Instructions:

1. Preheat your oven to 375°F (190°C).

2. Line a baking sheet with parchment paper.

3. In a medium bowl, whisk together flour, oats, baking soda, and salt.

4. In a large bowl, cream together butter and sugars until light and fluffy.

5. Add apple sauce and vanilla extract, mixing until well combined.

6. Gradually mix in the dry ingredients (flour mixture) until just combined, being careful not to overmix.

If using, add nuts, chocolate chips, or dried fruit and fold them into the dough.

7. Scoop the dough into 6 equal balls, about 1 tablespoon each.

8. Place the balls onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

9.Bake for 10-12 minutes or until lightly golden brown. (tbh I think I did less time than this because I had to take them out early. But I'm not using a house oven. Just use your senses)

10. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Some notes: If it puffs up, you've put too much baking soda, and all you have to do is hit it with a spoon and continue baking.

I used the apple sauce in place of 1 large egg.

This makes 6-8 medium shaped cookies!!
