Ooey Gooey Cake
St. Louis Butter Cake better known as Ooey Gooey Cake! This cake had rich cake mix crust topped with a luscious baked cream cheese layer. It's super easy to make.
RECIPE
Cake
1 box yellow cake mix -- (18.25-ounce)
1egg
1/2 cup butter -- (1 stick) melted
Filling
1 package cream cheese -- (8-ounce) softened
2 eggs
1 teaspoon pure vanilla extract
1 box confectioners' sugar -- (16-ounce)
1/2 cup butter -- (1 stick) melted
Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking pan.
In the bowl of an electric mixer, combine cake mix, egg, and butter
and mix well. Pat into the bottom of prepared pan and set aside.
Still using an electric mixer, beat cream cheese until smooth; add
eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce
speed of mixer and slowly pour in butter. Mix well.
Pour filling onto cake mixture and spread evenly. Bake for 40 to 50
minutes. Don't be afraid to make a judgment call on the cooking time,
because oven temperatures can vary. You want the center to be a little
gooey, so don't bake it past that point!
Remove from oven and allow to cool completely. Cut into squares.

You know those days when you just need a comforting, delicious treat but don't have hours to spend in the kitchen? That's exactly why this Ooey Gooey Butter Cake recipe became my absolute go-to! As a busy person, finding a dessert that feels homemade but starts with a simple yellow box cake mix is a total lifesaver. This isn't just any cake; it’s a taste of pure joy, with that perfect crust and the wonderfully soft, sweet, and YES, ooey gooey cream cheese filling. It truly lives up to its name, 'Ooey Gooey BUTTER CAKE' – the butter is key! If you're looking for easy cake recipes for beginners or simply a quick dessert with cake mix, this St. Louis Butter Cake is a must-try. I've made it countless times, and here are a few extra tips to ensure your Ooey Gooey Butter Cake turns out perfectly: Softened Cream Cheese is a Game-Changer: Make sure your cream cheese is truly softened before you start. This ensures a perfectly smooth, lump-free filling. Trust me, it makes a huge difference in the final texture. Don't Overmix the Filling: Once you add the confectioners' sugar, mix just until combined and smooth. Overmixing can incorporate too much air, which might affect the gooey texture. The Gooey Center is Key: The recipe says to make a judgment call on the cooking time, and it's spot on! You want the edges to be set and lightly golden, but the center should still have a slight jiggle. It will firm up as it cools, but retaining that slight softness is what gives it its signature 'ooey gooey' quality. Cool Completely: Patience is a virtue here! Letting the cake cool completely ensures clean cuts and allows the filling to fully set, giving you that delightful contrast between the crust and the creamy top. Beyond this classic version, the beauty of using a box cake mix is how versatile it is for creating other delicious cake mix desserts. If you're wondering what to make with box cake mix next, consider these fun variations: Flavor Twists: Swap out the yellow cake mix for a chocolate cake mix for a rich chocolate Ooey Gooey Butter Cake, or use a lemon cake mix for a zesty, bright treat. A spice cake mix would be absolutely divine for fall! These simple swaps instantly create new desserts using yellow cake mix (or other flavors!). Add-ins for Extra Texture: Before baking, gently fold in chocolate chips, chopped pecans or walnuts, or even a swirl of fruit preserves (like raspberry or apricot) into the cream cheese layer. These additions elevate the texture and flavor. Individual Servings: For a fun presentation, bake the mixture in a muffin tin lined with paper cups. Just remember to adjust your baking time – they'll cook much faster! This is a great idea for parties or portion control. This St. Louis Butter Cake is a true Midwestern gem, much like how other regions have their beloved simple cakes. While it's not quite an 'Oklahoma cake,' it shares that same spirit of comforting, easy-to-make, and incredibly satisfying regional desserts that often start with humble ingredients. So next time you're searching for recipes using a cake mix or simple recipes with yellow cake mix, remember this amazing Ooey Gooey Butter Cake. It's proof that sometimes, the simplest ingredients lead to the most extraordinary homemade flavors!
