My Go-To Spring Matcha Cookies w/ White Chocolate
Spring = slow mornings, soft light, and baking something that feels like self-care 💚
These matcha cookies are soft, chewy, and perfectly balanced with creamy white chocolate chunks… aka that girl energy in cookie form.
Ingredients
• 1 cup unsalted butter (softened)
• ¾ cup white sugar
• ½ cup brown sugar
• 2 eggs
• 1 tbsp vanilla extract
• 2 ½ cups all-purpose flour
• 1 tbsp matcha powder (high-quality for best color + flavor)
• 1 tsp baking soda
• ½ tsp salt
• 1 ½ cups white chocolate chunks
Instructions
1. Preheat oven to 350°F (175°C)
2. Cream butter + sugars until light & fluffy
3. Add eggs + vanilla, mix until smooth
4. In another bowl, whisk flour, matcha, baking soda, salt
5. Slowly combine dry ingredients into wet
6. Fold in white chocolate chunks
7. Scoop dough onto baking sheet
8. Bake 10–12 minutes until edges are set, centers soft
9. Let cool (they’ll firm up but stay chewy!)
My Tips (don’t skip!)
• Use good matcha for that vibrant green color 🍃
• Slightly underbake for soft centers
• Sprinkle extra chocolate chunks on top before baking for aesthetic 🤍
• Chill dough 30 min if you want thicker cookies
🍰 Flavor Pairings
• Matcha latte (obviously 💚)
• Strawberry milk 🍓
• Vanilla ice cream for a cookie sandwich moment
