Cookie Butter + Brownies = Perfection
Today’s therapy session was a batch of homemade Cookie Butter Swirl Brownies. 🤎✨
Rich, fudgy brownies swirled with creamy cookie butter and baked until perfectly gooey in the center. The hardest part was waiting for them to cool before cutting into them!
There’s something so relaxing about baking from scratch; mixing, swirling, and watching everything come together in the oven. And the reward? A warm brownie with pockets of cookie butter in every bite.
Ingredients
* ½ cup (1 stick) unsalted butter, melted
* ¾ cup granulated sugar
* 1 large egg
* 1 teaspoon vanilla extract
* ⅓ cup unsweetened cocoa powder
* ½ cup all-purpose flour
* ¼ teaspoon salt
* ¼ cup cookie butter, slightly warmed
Instructions
1. Preheat oven to 350°F. Line an 8x8-inch pan (or loaf pan for thicker brownies) with parchment paper.
2. In a bowl, whisk together melted butter and sugar.
3. Add egg and vanilla. Mix until smooth.
4. Stir in cocoa powder, flour, and salt until just combined.
5. Pour brownie batter into the prepared pan.
6. Drop spoonfuls of warmed cookie butter over the batter.
7. Use a knife or toothpick to gently swirl the cookie butter into the brownie batter.
8. Bake for 22–28 minutes, or until the center is set but still slightly fudgy.
9. Cool completely before slicing.
