These Skor Cookies Didn’t Last Long
I had one mission: make a Skor cookie… and it did NOT disappoint. 🤎🍪
I started with my favorite brown butter chocolate chip cookie base and folded in chopped Skor bars. The buttery, toffee crunch with those rich brown butter flavors? Absolutely delicious. These disappeared way faster than I expected!
Before anyone asks (because I know someone will 😅): I don’t have a written recipe with measurements for these. I baked these from memory using my go-to cookie base, so unfortunately I can’t share exact measurements.
I think this might be one of my favorite cookie combinations yet!

When I decided to add Skor bars to my usual brown butter chocolate chip cookie dough, I never expected how perfectly the toffee crunch would complement the buttery base. The Skor bars, rich with caramelized sugar and butter, add a delightful texture and a bit of a caramel bite that balances beautifully with the soft and chewy cookie. I often find that using brown butter instead of regular butter deepens the flavor, giving the cookies a nutty, caramel undertone that works great with chocolate and toffee. If you want your cookies to have that ideal melt-in-your-mouth feel, I recommend chilling the dough for at least an hour before baking. This helps to prevent too much spreading and keeps the edges wonderfully crisp while the center stays soft. Even though I bake these cookies from memory, I usually start with a base of all-purpose flour, brown sugar for chewiness, a touch of baking soda, and lots of finely browned butter. The key is folding in chopped Skor bars just before scooping out the dough, so the toffee bits stay intact and get that perfect crunch after baking. For those curious about variations, you can try adding a sprinkle of sea salt on top before baking to enhance the contrast of sweet and salty flavors. Alternatively, mixing in some mini chocolate chips along with the Skor pieces can add an extra layer of gooey chocolate goodness. One tip I've learned is to watch the cookies closely during baking – the edges should turn golden brown while the centers look slightly underbaked. This keeps them soft inside once cooled. These cookies are fantastic as an afternoon snack with a glass of cold milk or a hot cup of coffee. Overall, incorporating Skor bars not only elevates classic chocolate chip cookies but also creates a texture and flavor profile that impresses everyone who tries them. I highly encourage cookie lovers to experiment with toffee mix-ins – it might just become your new favorite cookie twist too!
