Seafood-Stuffed Jalapeños with Creamy Pasta & Corn

Dinner had a little kick tonight! These stuffed jalapeños are filled with ground beef, shrimp, crab meat, and crawfish tails, seasoned with Old Bay for extra flavor. I topped them with breadcrumbs and served them alongside creamy pasta and buttery corn for a comforting homemade dinner. A little seafood, a little spice, and a whole lot of flavor!

For the stuffed jalapeños

• Fresh jalapeño peppers

• Ground beef

• Shrimp, peeled and deveined

• Lump crab meat

• Crawfish tails

• Chopped onion

• Minced garlic

• Old Bay seasoning

• Creole seasoning, if used

• Garlic powder

• Onion powder

• Black pepper

• Breadcrumbs

• Cooking oil or butter

For the creamy pasta:

• Pasta of your choice

• Butter

• Heavy cream or milk

• Shredded cheese

• Garlic

• Seasonings to taste

For the corn:

• Corn

• Butter

• Salt and pepper

Directions

1. Wash the jalapeños, slice them lengthwise, and remove the seeds and membranes.

2. Brown the ground beef in a skillet with chopped onion, garlic, Old Bay, and your other seasonings.

3. Add the shrimp and cook until opaque. Gently fold in the crab meat and crawfish tails until heated through.

4. Fill each jalapeño half with the seafood and beef mixture, then sprinkle breadcrumbs over the top.

5. Bake at your chosen temperature until the peppers are tender, the topping is golden, and the filling is thoroughly cooked.

6. Cook the pasta according to the package directions. Prepare your creamy cheese sauce and toss with the pasta.

7. Heat the corn with butter and season to taste.

8. Plate everything together and enjoy!

My kitchen tip: Old Bay brings a savory seafood flavor, so taste your filling before adding extra salt. You want all those flavors to complement each other!

... Read moreIf you're looking to elevate your next dinner with a balance of spice and rich flavors, seafood-stuffed jalapeños paired with creamy pasta and buttered corn make an unforgettable meal. From my experience, the key to this dish lies in how you prepare the jalapeños and the seasoning blend. Removing the seeds and membranes from the jalapeños ensures the heat is manageable but still offers that spicy kick. I love using Old Bay seasoning combined with Creole seasoning to enhance the seafood flavors. The Old Bay adds that perfect savory touch that complements shrimp, crab, and crawfish beautifully without overpowering. When cooking the seafood and ground beef mixture, I make sure to sauté the onion and garlic lightly before adding the proteins to build a deep flavor base. Also, the idea of topping the stuffed peppers with breadcrumbs creates a delightful crisp texture after baking, contrasting nicely with the moist filling. For the creamy pasta, I typically opt for a medium-sized pasta like penne or shells, which holds the cheese sauce well. Using heavy cream and freshly shredded cheese makes the pasta irresistibly smooth and rich. Buttered corn is the perfect simple side to round out this meal—the sweetness of the corn and creaminess of the butter serve as a cooling counterpoint to the spicy peppers. Adding personal tips: taste your filling mixture before filling the peppers to adjust seasoning because Old Bay seasoning can already be salty. Also, to save time, prepare the creamy sauce ahead and toss with pasta just before serving. This dish is a great way to impress family or friends with something a little different but still comforting. Sharing this recipe has become one of my favorite ways to bring a little heat and seafood flair to the dinner table, especially when paired with the creamy pasta and buttery corn that make it a full, hearty meal.
