... Read moreOh my goodness, the joy of stepping into the garden and seeing those vibrant peppers ready for picking! My Gypse sweet peppers are truly a highlight this season. You know, when I first started gardening, figuring out when to harvest green peppers was always a bit of a mystery. I'd sometimes pick too early, or leave them on the plant too long, hoping for more growth. But I've learned a few tricks that make all the difference, especially for those delicious green beauties. First off, let's talk about timing. For Gypse sweet peppers, or any sweet pepper you intend to pick green, size is a key indicator. You want them to be a good, substantial size for their variety, usually around 3-5 inches long, and plump. While they can stay on the plant to ripen to their mature color (often red or orange for sweet peppers), picking them green means you get that crisp, slightly less sweet flavor that's wonderful in savory dishes. Firmness is another big one. Gently squeeze the pepper; it should feel firm and solid, not soft or squishy. If it feels hollow or light, it might still need more time to fill out. I also look at the skin – it should be glossy and smooth, without blemishes. Now, for the actual harvesting technique. Trust me on this: don't just pull them off! Pepper stems can be quite brittle, and yanking can damage the plant, potentially reducing future yields. I always use clean garden shears or a sharp knife. Find the stem right above the pepper and snip it cleanly. Leave about an inch of stem attached to the pepper; this helps them store better and prevents rot. I usually wear gloves when harvesting, not just for cleanliness but also to protect my hands from any plant sap. One thing I learned from my "Bonnie PLANTS" starter – they grow so vigorously! My Gypse peppers got so HUGE this year, just like that picture. It's a fantastic problem to have! And speaking of problems, those pesky bugs! I've found that using lightweight row covers is a lifesaver. As the OCR mentioned, "I use this covers to protect from the bugs," and it really does make a difference in getting those pristine peppers. After harvesting, give your peppers a good wash. If I'm not using them right away, I store them in the crisper drawer of my fridge. They'll last a week or two there, sometimes even longer. And guess what? These Gypse sweet peppers are just divine! The other day, I was making a simple salad, and as the OCR noted, they're "Nicely paired with some romaine lettuce." The crunch and sweet flavor are just perfect. Growing your own peppers, even if you just start with a few "Bonnie PLANTS" from the garden center, is such a rewarding experience.
