when you don’t have a chick-fil-a near you but still want chicken-minis 😋

Step 1: get all your ingredients out so you’re not running around

Step 2: make your seasoning blend and combine with 2 cups of flour in a bowl and set aside

Step 3: In another bowl break 3 eggs and mix the yolks and half a cup of milk in to make your egg wash and set aside

Step 4: take chicken tenderloins and cut them into nugget sized pieces

Step 5: get an 8qt pot or what ever you prefer to fry in and heat oil on medium to medium-high heat

Step 6: while oil is heating take each piece of chicken and pat it in the flour blend and then transfer it to the egg wash and back to the flour

Tip✨✨ use one hand for dry and the other for wet ingredients

Step 7: once oil is heated, in small batches of 4-6 nuggets fry them till golden brown

Step 8: take the rolls and remove them from the tray and put the nuggets into them and back into their tray

Step 9: take melted butter and honey and put it all over the top of the rolls

Step 10: bake the rolls for about 10-15 minutes (depending on how golden you want them)

... Read moreI absolutely love those iconic Chick-fil-A Chicken Minis, but let's be real, sometimes there's just not a location close enough, or you want that homemade touch! After many attempts, I've finally perfected my own copycat recipe that brings all that deliciousness right to my kitchen table. It’s so satisfying to recreate them, especially when you can customize them exactly to your liking. One of the biggest secrets to getting that perfect, irresistible restaurant-quality chicken mini isn't just about the chicken itself, but also about the incredible flavor and texture. For that beautiful golden-brown crispness that looks amazing in any close-up, oil temperature is key. Make sure your oil is preheated to a consistent medium-high heat (around 350-375°F). Frying in small batches of 4-6 chicken nuggets ensures the oil temperature doesn't drop too much, leading to a perfectly crispy exterior every time. Also, don't forget to pat your chicken breast tenderloins dry before cutting them into nugget sized pieces and starting the breading process. This helps the flour mixture adhere better, giving you that satisfying crunch. My trick is to use one hand for the wet ingredients and another for the dry – it keeps things much cleaner and makes the double-dredging (flour, egg wash, then back to flour) super efficient! Now, let's talk about flavor – because what’s a golden-brown exterior without an amazing taste inside? While the original recipe covers the basics, I've found a few ways to really elevate the seasoning. To get an extra layer of savory depth, reminiscent of that classic fast-food taste, consider adding a teaspoon of powdered chicken broth or bouillon to your flour dredge. This little hack, similar to what some people achieve with products like Herb Ox, can seriously amp up the umami in your fried chicken pieces. Beyond the onion powder, ground white pepper, and paprika you already use, try adding a pinch of garlic powder and a tiny dash of cayenne pepper. The dill weed adds a unique aromatic note, but a bit of celery salt can also give a surprising boost to that familiar chicken flavor profile. If you're feeling adventurous, a quick brine in buttermilk or even pickle juice for 30 minutes before breading can make your chicken incredibly tender and juicy. Finally, for the soft, glazed rolls that complete the mini experience, I love using Sister Schubert's Parker House Style Yeast Rolls. After baking your chicken, simply place the nuggets back into the rolls in their foil tray. The original recipe mentions melting butter and honey for the glaze, which is perfect. For an extra special touch, sometimes I add a tiny bit of vanilla extract to that melted butter and honey mix before brushing it generously over the tops of the rolls. Bake them for just 10-15 minutes, or until they’re warmed through and glistening. For presentation, arranging them neatly in the tray, perhaps with a sprig of parsley for color, makes them even more appealing for any close-up shot! Don't forget your favorite dipping sauces – honey mustard, BBQ, or even a creamy ranch are all fantastic complements. Enjoy your homemade Chick-fil-A minis!
