... Read moreFrom my own experience preparing Bacalao Guisado, soaking the salted cod overnight is the key to achieving the perfect texture and removing excess salt without boiling. I usually soak the bacalao in cold water inside the fridge for about 24 hours, changing the water once or twice to ensure it's properly desalinated. This step enhances the fish's natural flavor and prevents it from becoming overly salty or tough. When starting the stew, I recommend heating the olive oil gently before adding the sofrito and seasonings such as sazón (without color) and black pepper to let the aromatics bloom fully. The combination of sweet tricolor ajĆes, Anaheim pepper, and julienned bell peppers gives the stew a colorful and vibrant mix of flavors and textures that complement the salty cod beautifully. Adding green olives stuffed with pimentos contributes a subtle briny note that balances the richness of the fish and peppers. While the original recipe lists confetti-chopped recao (also known as culantro), I find substituting with fresh cilantro works well if recao is unavailable. When cooking, it’s important to simmer gently until the peppers are tender but still retain some bite, which usually takes about 20 to 25 minutes. This ensures a stew that is deeply flavorful with contrasting textures. Serve Bacalao Guisado over white rice or alongside boiled green plantains for a complete, satisfying meal. For a personal twist, I sometimes add a splash of coconut milk near the end of cooking to introduce a creamy balance to the savory and spicy notes in this dish. This variation is especially comforting on cooler days. Overall, Bacalao Guisado is a versatile and heartwarming recipe that brings the essence of Caribbean home cooking to your table. It’s a dish that invites sharing and enjoying with family and friends.
