When working with sourdough starters, I’ve found that patience and consistency are truly the keys to success. If your starter has turned too acidic, often smelling vinegary or alcoholic, it can hinder your bread’s ability to rise properly. From my experience, feeding your starter regularly every 12 hours with a ratio of 1:5:5 (starter:water:flour) significantly helps in balancing the activity of the wild yeast and bacteria. Keeping your starter in a warm place, ideally around 75-78°F (24-26°C), encourages healthy fermentation. Colder environments tend to slow down the yeast, giving lactic acid bacteria the upper hand and increasing sourness. I also try to stir my starter gently during feedings, which helps release any built-up gases and keeps the culture lively. One important sign of a healthy starter is its pleasant, mildly sweet smell—not overpowering vinegar or alcohol. If it smells off, discard some of the starter mixture before feeding to avoid overwhelming acidity. Over the course of 48 hours of regular feeding with this approach, you’ll notice the starter becomes more bubbly and lively, ready to give your bread an optimal rise. Remember, sourdough baking is a journey with each starter having its own personality based on environment and ingredients. Staying attentive to smells, texture, and feeding schedules can turn an acidic starter around. Following tips from experienced bakers and practicing daily care helped me revive my starter multiple times, and it’s incredibly satisfying to bake fluffy, flavorful loaves at home.

so i've been trying to fix my starter to make it smell less vinegary but it's not working... i've been taking more out when i discard it but it still smells vinegary... idk what to do!
