Mom lunch

This is probably one of my favorite quick throw together mom lunches. My toddler also likes this one as well.

I typically use spiral pasta, but I’m out & running out defeats the “fast” aspect.

But it’s just pasta, cucumber, tomato & zesty Italian dressing.

I also love to add turkey & onion in as well

One of my go-to meals is a pasta salad that combines minimal ingredients yet packs great flavor and freshness. Spiral pasta works very well because it holds the dressing and ingredients nicely, providing a satisfying texture. When I’m out of spiral pasta, I’ve learned that substituting with other shapes like penne or fusilli still makes the dish enjoyable and cuts down prep time. Adding turkey offers a good source of lean protein which keeps the meal balanced and filling, while the cucumber and tomato contribute crispness and essential vitamins. The zesty Italian dressing adds a tangy and savory punch that ties everything together without any heavy cooking. What makes this lunch extra appealing for toddlers is its colorful appearance and bite-sized ingredients. You can even customize the mix-in vegetables or proteins based on your child’s preferences or what's in your fridge, such as adding some diced onions for a little extra flavor or swapping turkey for grilled chicken. From my experience, preparing this pasta salad in bulk also allows you to pack lunches for the next day or have quick snacks on hand. It’s versatile—perfect not just for mom lunches but also for picnics or easy potlucks. Give it a try, and you might find yourself relying on this recipe as much as I do!
