Red Velvet Oreo Stuffed Brownies

You read that right. And they were absolutely delicious. 🤤

I made these last week and, no surprise, ate almost the whole pan (8x8) to myself. 😅😅

I made homemade cream cheese frosting instead of the Oreo buttercream that was recommended, as I didn’t have heavy cream (and didn’t want to make any as I only needed 1 tbsp) - but I think this frosting fit perfect. 🤩

Recipe I used was from @adrianastreats on TikTok. She’s a queen and doesn’t gate-keep 👏🏻👏🏻

Recipe:

Dry:

1 1/4 c. all purpose flour

1/4 c. Unsweetened coco powder

1/4 tsp salt

16 Oreos

Wet:

3/4 c. (1 1/2 sticks) unsalted butter - melted and cooled

1 1/2 c. granulated sugar

2 large eggs

Red gel food coloring

2 tsp vanilla

Steps:

- Cream sugar and butter together until smooth. Add eggs, red food coloring and vanilla. Then mix in dry ingredients. (This will be a thicker batter, so don’t be alarmed)

- Add half the batter to a greased and parchment papered 8x8 pan. Place 16 Oreos and add the rest of the batter on top.

- Back at 350 degrees for ~30 minutes.

Oreo Buttercream:

3/4 c. unsalted butter - cold and cubed

2 1/2 c. powdered sugar

6 crushed Oreos

1 tbsp heavy cream

2 tsp vanilla

Steps:

- Mix butter until light and fuffy. Mix on low while slowly adding powdered sugar in, followed by the heavy cream.

- After these are incorporated, beat on high for 60 seconds. Add vanilla and Oreos. Beat on high for an additional 60 seconds.

Cream Cheese Frosting:

8oz block cream cheese

1/2 c. unsalted butter - softened

1 tsp vanilla

3 c. powdered sugar

Steps:

- Beat cream cheese and butter together until smooth. Add vanilla.

- Add 1 cup of powdered sugar at a time until fully incorporated.
