Christmas Brown Sugar and Cinnamon Streusel Coffee Cake
Ingredients:
For the Cake:
1 ½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
1 cup brown sugar
2 large eggs
1 tsp vanilla extract
½ cup sour cream
¼ cup milk
For the Cinnamon Streusel:
½ cup brown sugar
1 tbsp ground cinnamon
¼ cup all-purpose flour
¼ cup cold butter, cut into pieces
Instructions:
Prepare the Streusel: In a small bowl, mix brown sugar, cinnamon, and flour. Add the cold butter and mix with a fork until crumbly. Set aside.
Make the Cake Batter: Preheat the oven to 350°F (175°C) and grease a 9-inch round or square baking pan. In a medium bowl, whisk flour, baking powder, baking soda, and salt.
In a large bowl, cream together softened butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each. Add vanilla extract.
Mix in half of the dry ingredients, then add sour cream and milk. Mix in the remaining dry ingredients until just combined.
Assemble and Bake: Pour half of the batter into the prepared pan. Sprinkle half of the streusel mixture on top. Add the remaining batter and top with the rest of the streusel.
Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. Let it cool slightly before serving.
