After Suzy's delicious crispitos, I was inspired to perfect my own homemade version! There's nothing quite like biting into a warm, golden-brown crispito with that satisfying crunch, and knowing exactly what went into it. Forget those school cafeteria crispitos – making them at home lets you control the quality and flavor. Here's how I make my homemade crispitos recipe even more amazing: Ingredients: Cooked shredded chicken (rotisserie chicken works wonders for speed!) Shredded cheddar or a Mexican cheese blend Small flour tortillas (the street taco size is perfect for individual crispitos) A pinch of cumin and chili powder for extra flavor in the chicken Vegetable oil for frying (or a cooking spray for air frying) My Simple Steps: Prepare the Filling: In a bowl, combine your shredded chicken with the cheese and a sprinkle of cumin and chili powder. Mix it well. This is where you can really customize the flavor! Roll 'em Up: Lay out a tortilla. Spoon about a tablespoon or two of the chicken and cheese mixture in a line across the center. Don't overfill! Carefully roll the tortilla up tightly, tucking in the ends if you like, to create those neat rolled tortillas filled with chicken and cheese. Frying for Perfection: The original article mentioned lightly fried, and I agree it's key for that authentic taste. Heat about an inch of vegetable oil in a pan over medium heat. Once hot, carefully place your crispitos seam-side down. Fry them for about 2-3 minutes per side, until they're golden-brown crispitos and the melted cheese starts to peek out. Make sure not to overcrowd the pan. Drain on paper towels. This method truly gives you that amazing texture. Now, about those air fryer questions! While traditionally fried crispitos are delicious, I've also experimented with an air fryer crispito recipe for a lighter option. If you're concerned about air fryers bad for you or looking for air fryers without forever chemicals, it's definitely a great alternative to deep frying, offering a way to enjoy that crispy texture with less oil. Air Fryer Method: Prep: Follow steps 1 and 2 above to prepare and roll your crispitos. Air Fry: Lightly spray your rolled tortillas with cooking oil. Place them in a single layer in your air fryer basket (you might need to do batches). Set your air fryer to 375°F (190°C) and cook for 8-12 minutes, flipping halfway through, until they are golden-brown and crispy. The result is surprisingly close to lightly fried ones, but with much less oil! I've found that using an air fryer is a fantastic way to cut down on extra fats, and many new models, like some I've seen from Ninja Crispi series, are designed with healthier materials, addressing concerns about non forever chemical air fryer options. It's also a great way to prevent the formation of acrylamide that can sometimes occur with high-temperature deep frying. So, whether you're using a Ninja Crispi Air Fryer 5-in-1 or a basic model, you can still achieve delicious homemade crispitos!
