Who loves a good crunchy salad??? I know I do… This year I’ve been trying to be intentional about what I am putting in my body and Chile this salad did not disappoint.
Here’s what’s in it:
•Fresh Kale drizzle with Olive Oil, fresh chopped garlic and tossed in Cayenne Pepper
• Baby Spinach
• Arugula
•Purple Cabbage
•Carrots
•Tomatoes
• Pickles
•Slightly Sautéed Sweet Onions
• Kalmata Olives
• Broccoli
• Avocado
• Oyster Mushrooms (sautéed in olive oil, cayenne pepper, Kinder’s Buttery Garlic & Herb, Grill Mates Brown Sugar Bourbon and and course Garlic Powder)
• Kimchi (Garlic flavor)
Now the Dijon Lime Vinaigrette that will knock your socks off:
•Dijon Mustard
•Olive Oil
•Red Wine Vinegar
•Oregano
•Honey
•Salt
•Pepper
•Kinder’s Buttery Garlic & Herb (bc it’s my favorite)
•Garlic Powder
• Fresh Lime juice

Speaking of crunch, that's what makes a 'kale crunch salad' truly special, isn't it? Beyond the kale itself, I love adding elements that bring that satisfying texture. Think about toasted nuts like almonds or walnuts, crunchy roasted chickpeas, or even some crispy baked tortilla strips if you're feeling adventurous. For this particular recipe, the purple cabbage and carrots already add a fantastic bite, but don't shy away from experimenting! I sometimes add thinly sliced radishes for an extra peppery crunch. One of the best things about a hearty salad like this is its versatility. While the original recipe has a fantastic mix, don't be afraid to make it your own based on what you have in your fridge or your dietary preferences. For instance, if oyster mushrooms aren't readily available, sautéed cremini or shiitake mushrooms would work beautifully. Not a fan of olives?
