Using a small, fine mesh sieve to sift the powder breaks up these clumps, allowing the tea to mix evenly with water. In my experience, authentic, high-grade matcha tends to have a much finer and more vibrant texture with fewer clumps, but even so, sifting is recommended for the best results. If you don’t sift, the clumps will float on the surface or sink, making it hard to whisk them into a smooth froth. I usually use a bamboo whisk (chasen) after sifting to create that signature creamy layer on top. Also, storing matcha powder properly in an airtight container away from light and humidity helps prevent clumping. If you notice the powder is heavily clumped even after sifting, it might be time to replace it, as the tea’s flavor diminishes when the powder deteriorates.
