Today I’m pairing it with @wildwonder Mango Gold, a sparkling drink with prebiotics and probiotics to support gut health. Their flavors blend herbal wisdom with vibrant fruit, making it the perfect pairing for this heritage-inspired dish.
Ingredients:
• 2 nopales, diced
• ¼ white onion, sliced
• 4 Roma tomatoes
• 1 serrano pepper
• 4 garlic cloves
• 3-4 Chile de árbol (adjust to your spice preference)
• 4–6 eggs
• Salt, to taste
• Pinto beans, for serving
Directions:
Cook the nopales with the sliced onion until the nopales are tender, remove the nopales from the pan.
Meanwhile, boil the tomatoes, serrano pepper, ¼ white onion, garlic cloves, and chile de árbol until softened. Blend until smooth and season with salt.
Scramble the eggs in the same pan, add the nopales back in, pour the salsa over everything, and let it simmer for a couple of minutes.
Serve with a side of pinto beans and enjoy!

Huevos con nopales is not only a flavorful and traditional Mexican dish but also an excellent choice for a healthy breakfast, especially for those looking to balance taste and nutrition. Nopales, or cactus paddles, are low in calories and rich in fiber, antioxidants, and essential vitamins such as vitamin C and magnesium. These nutritional elements contribute to better digestion and anti-inflammatory benefits. Cooking nopales with onions adds a natural sweetness that complements the tangy salsa made from simmered tomatoes, serrano peppers, garlic, and chile de árbol, which offers a spicy kick tailored to your preference. The inclusion of eggs provides a solid protein source, ideal for sustained energy throughout the morning. Pairing this dish with Wild Wonder Mango Gold, a sparkling drink infused with prebiotics and probiotics, further supports gut health. Prebiotics nourish the beneficial bacteria in your digestive system, while probiotics introduce live cultures that enhance your microbiome balance. This pairing amplifies the health benefits of the breakfast, aiding in improved digestion and overall well-being. Additionally, serving the meal with pinto beans adds an extra dose of fiber and protein, helping to regulate blood sugar and keep you satiated longer. This combination embodies the rich culinary heritage of Mexico while aligning perfectly with modern health-conscious eating trends.
