3 ingredient Cookies!

I make these year round and had to share again! This time I went with a lemon cake mix. It was so delicious! It’s a doughy cake like cookie and that’s how I like it! Sooo easy and very yummy. Next time I’m going to make smaller ones. Maybe bite size?!? Ahh! I can’t wait!

... Read moreYou know how much I love sharing super easy and delicious recipes, and these 3-ingredient lemon cookies are truly my all-time favorite! I make them constantly, not just for holidays, but whenever I need a quick pick-me-up or a last-minute dessert. What makes them so magical? It’s the simplicity combined with that incredible, soft, doughy texture that’s just pure perfection. I've gotten so many questions about how to get them *just right*, so let me share some of my personal tips! First, about the ingredients: while I absolutely adore a good lemon cake mix, don't be afraid to experiment with a box of any cake mix you love! Chocolate, strawberry, even funfetti – they all work wonderfully with a tub of whipped cream. Make sure your whipped cream is thawed but still cold for the best consistency when mixing. And for that lovely outer crunch, don't skimp on the powdered sugar in bowl for coating. It really adds to the aesthetic and the taste! My trick for mixing is to use a sturdy spoon or even your hands once it gets thick. It comes together surprisingly quickly! Once you have your dough, rolling into balls is the next fun part. I usually aim for golf-ball sized, but honestly, making them smaller, almost bite-sized, is genius – less guilt and more to share! After rolling, generously coat each dough ball in the powdered sugar. This step is crucial for that classic crinkled cookie look. Baking is straightforward: pop them into a preheated oven at 350°F for about 14 minutes. Keep an eye on them! Every oven is different, but you’re looking for slightly golden edges and a soft center. They might look a little underdone when you pull them out, but they'll firm up as they cool. That's the secret to their delightfully doughy, cake-like texture! For me, that's what truly defines perfection in a cookie. And the best part? These aren't just limited to lemon! I've made chocolate versions, red velvet (using red velvet cake mix), and even strawberry. It's such a versatile cookie type for when you want something homemade without all the fuss. They're fantastic for potlucks, unexpected guests, or just treating yourself after a long day. Store them in an airtight container at room temperature, and they stay wonderfully soft for days. Seriously, once you try these 3-ingredient cookies, you'll wonder why you ever made complicated recipes!
