RECIPE
ingredients:
MUFFIN BASE
- 1 can pumpkin puree
- 1/2 cup melted butter
- 3/4 cup sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
CINNAMON SWIRL
- 1/4 cup melted butter
- 1/4 cup brown sugar
- 1 tsp cinnamon
GLAZE
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
- 3 tbsp milk
INSTRUCTIONS:
- preheat oven to 350° & line muffin pan with liners or spray with nonstick spray
- in a bowl mix pumpkin, sugar, egg, vanilla, & melted butter
- in a separate bowl mix flour, baking soda, baking powder, salt, & cinnamon
- combine dry ingredients with wet by gently folding together
- scoop half the muffin mix into pan
- combine the brown sugar, cinnamon, and butter into a small bowl
- scoop brown sugar mixture into center of muffins
- fill the rest of the muffin with pumpkin mixture then swirl gently with toothpick
- cook muffins for 24 minutes
- while your muffins are cooling mix your powdered sugar, vanilla, & milk
- once muffins are cooled drizzle glaze on top
