This recipe yields a 1.5 to 2-pound loaf.

Ingredients:

· Wet Ingredients:

· 2 large ripe bananas, mashed (about 1 cup)

· 1 large egg

· ¼ cup (60g) unsalted butter, melted (or vegetable oil)

· 1 teaspoon vanilla extract

· Dry Ingredients:

· 1 ½ cups (190g) all-purpose flour

· ¾ cup (150g) granulated sugar (white or brown sugar works too)

· 1 teaspoon baking soda

· ½ teaspoon baking powder

· ½ teaspoon salt

· ½ teaspoon ground cinnamon (optional)

· Mix-ins (Optional):

· ½ cup (85g) chocolate chips

· ½ cup (60g) chopped walnuts or pecans

Instructions:

1. Prepare the Pan: Lightly grease and flour your bread machine pan. This is an important step to prevent sticking since quick breads are more delicate.

2. Mash Bananas: In a medium bowl, peel and mash the ripe bananas with a fork until smooth.
