Easy cinnamon rolls!

Made these when I had leftover boiled potatoes and honestly… they made the rolls SO soft and fluffy 😭🫶 perfect for a cozy bake day

Recipe:

Boil & rice 1 cup potatoes (smooth, no lumps).

In a bowl, mix ¾ cup warm milk + 2¼ tsp yeast + 2 tbsp sugar, let it foam.

Add riced potatoes + ¼ cup melted butter + 1 egg + 1 tsp salt.

Mix in 3–3½ cups flour to form a soft dough. Knead till smooth, let rise 1–1.5 hr.

Filling:

Mix ½ cup brown sugar + 1 tbsp cinnamon + 3 tbsp soft butter.

Roll dough into a rectangle, spread filling, roll tight, cut into rolls.

Place in pan, let rise again 30–40 mins.

Bake at 350°F (175°C) for 20–25 mins.

Glaze (optional):

Mix powdered sugar + a little milk + vanilla, drizzle on warm rolls

I like mine slightly less sweet so I go lighter on the glaze. Also don’t skip the second rise… that’s what makes them extra fluffy 🤍
