First time making a vegan key lime cheesecake! 🍋‍🟩

The taste? 10/10 incredible, silky, and refreshingly tart. But full transparency: I poured all the coconut oil in at once instead of slowly streaming it in, so it ended up a little softer than planned! Now I know for next time 🙈 (Honestly, popping it in the freezer turns it into an unbelievable ice cream-style pie, so no complaints here!).

Ingredients:

The Nut-Free Crust:

• 1 cup rolled oats

• 1/2 cup raw sunflower seeds

• 3 tbsp melted coconut oil

• 2 tbsp maple syrup + pinch of salt

The Lime Filling:

• 1 tub Violife cream cheese

• 1/2 cup coconut cream

• 1/3 cup melted refined coconut oil (stream it slowly!)

• 1/3 cup fresh lime juice + zest

• 1/3 cup maple syrup

Also added fresh blueberries 🫐 to half the filling.

Steps:

1. Pulse crust ingredients in a food processor, press into pie dish, and set aside.

2. Blend cream cheese, coconut cream, lime juice, and maple syrup until smooth.

3. Slowly stream in melted coconut oil while blending on low!

4. Pour over crust, freeze 2 hours, then chill in fridge.
