2 cans (approx. 3 cups) brown lentils, rinsed & drained
1 cup light canned coconut milk
1 cup low sodium vegetable broth
4 cups fresh baby spinach
Salt and pepper to taste
The Citrus-Herb Splash & Garnish:
2 tbsp fresh lime juice + 1 tsp fresh lime zest
1/4 cup fresh cilantro, finely chopped
1/4 cup fresh mint, finely chopped
3–4 tbsp fresh chives, finely snipped

INSTRUCTIONS:
