Baked Cardamom Vanilla Chai Doughnuts 🍩
(Yields: 6 doughnuts | Bake: 350°F for 11–13 mins)
Dry Bowl:
1 cup Gluten-Free 1-to-1 Flour
½ cup Raw cane sugar
½ tsp Ground cardamom (the star!)
½ tsp Ground cinnamon
¼ tsp Ground ginger
1 tsp Baking powder
¼ tsp Salt
Wet Bowl:
½ cup Unsweetened almond milk
1 Flax egg (1 tbsp ground flax + 3 tbsp warm water, set for 5 mins)
2 tbsp Melted coconut oil
1 tsp Vanilla extract
Glaze & Topping:
1 cup Powdered sugar + 1-2 tbsp almond milk + splash of vanilla + 1/2 tsp of cinnamon + pinch of cardamom
½ cup Unsweetened coconut flakes (toasted on stovetop)
Instructions:
1. Prep: Whisk flax egg and set aside. Toast coconut on stovetop low heat for 3–5 mins; cool.
2. Bowl 1 (Dry): Whisk all dry ingredients together until smooth and uniform.
3. Bowl 2 (Wet): Whisk all wet ingredients (including flax egg) until emulsified.
4. Combine: Pour wet into dry. Switch to a spatula and gently fold just until combined. Do not over stir or fold. Fold just enough so the dry ingredients are wet.

6. Finish: Cool completely, dip in vanilla glaze, and press immediately into toasted coconut.
If you’re searching for a delightful and gut-safe bakery treat to enjoy or share with loved ones, these baked vanilla chai doughnuts offer a fantastic choice that’s both vegan and gluten-free. I tried this recipe when I wanted something comforting yet light, and I loved how the cardamom truly took center stage in the flavor profile, adding that fragrant spice often missing in regular doughnuts. One thing I learned through experience is that carefully whisking the wet and dry ingredients separately before folding them gently together is crucial. This technique helps keep the texture incredibly soft and cakey, just like homemade pillows of goodness. Over-mixing can lead to dense doughnuts, so patience during mixing really pays off. The use of a flax egg is a smart vegan substitute that not only binds the batter but also brings subtle nutty notes that complement the warm spices like cinnamon and ginger. Toasting the coconut flakes on the stovetop intensifies their flavor and provides a satisfying crunch atop the vanilla glaze—this combination adds layers of texture that elevate the eating experience. For those who prioritize organic and natural ingredients, choosing raw cane sugar and unsweetened almond milk ensures these doughnuts remain free from unnecessary additives. The recipe’s simplicity means you don’t need fancy equipment; a doughnut pan and basic kitchen tools suffice. I baked mine at 350°F for around 12 minutes, checking for the classic spring-back tops indicating they’re perfectly done. If you love chai flavors or are looking for plant-based baking inspiration, this recipe is a wonderful way to experiment with spices that are often overlooked in baked treats. These doughnuts pair beautifully with a warm cup of almond milk chai or your favorite tea and can brighten up any cozy afternoon. Plus, they make a thoughtful gift or party treat for friends following gluten-free or vegan diets. Give it a try and enjoy the comforting blend of cardamom, vanilla, and cinnamon. Baking these doughnuts has become a favorite weekend ritual, and they never fail to impress family and friends alike! Feel free to customize toppings with chopped nuts or a sprinkle of cinnamon sugar for your personal twist.
