🍔 Sweet Potato & Black Bean Burgers

Ingredients
1 cup sweet potato puree (or 1 medium sweet potato, baked and mashed)
1 cup canned black beans (thoroughly rinsed, drained, and patted dry)
¾ cup gluten-free rolled oats (or oat flour)
1 tbsp garlic-infused olive oil (plus extra for searing)
1 tbsp tamari (gluten-free soy sauce)
1 tsp smoked paprika
½ tsp ground cumin
½ tsp dried oregano or thyme
¼ tsp sea salt & black pepper to taste
Instructions
1. Prep the Oats & Beans: If using rolled oats, blend them in a food processor or blender for a few seconds until they reach a coarse flour consistency. Place drained black beans on paper towels and pat completely dry. Transfer to a bowl and mash with a fork, leaving some whole for texture.
2. Mix the Base: Add the sweet potato puree, oat flour, garlic-infused olive oil, tamari, smoked paprika, cumin, oregano (or thyme), salt, and black pepper to the black beans. Stir thoroughly until fully combined.
3. Form the Patties: Divide the mixture into 4 equal portions. (Tip: If the mixture feels too soft, let it rest for 5 minutes so the oats absorb excess moisture).
4. Cook:
Stovetop: Heat a splash of garlic-infused olive oil in a non-stick skillet over medium heat. Sear patties for 5–6 minutes per side until a crispy, deep golden crust forms.
Air Fryer: Preheat to 375°F (190°C). Place patties on a sheet of parchment paper inside the basket and air-fry for 12–14 minutes, gently flipping halfway through.

2 tbsp Mayonnaise (standard or vegan)
1 tsp Dijon mustard
1 tsp Pure maple syrup

1. Add mayo, Dijon, maple syrup, and sea salt to a small dish.
2. Whisk with a fork until smooth and creamy.
3. Spread generously on the top and bottom burger buns. I didn’t add much to my burger (as you can see) but this sauce is simple & tasty.
