i used AP flour instead of bread flour, i’m honestly surprised I was as successful as I was 😭
PÂTE À CHOUX: the experience
to further explain my fails…
fail 1: the burst of cool air from opening the oven door allowed the steam to escape; when i took them out of the oven they were cracked and started deflating immediately:/
cracking is caused by steam trying to escape and having nowhere to go, so it bursts through the shell —could also be a result of the oven temp being too high but my oven tends to run cool
fail 2:
i figured it wasn’t the eggs/ batter because my dough wasn’t runny. as soon as i took the choux out of the oven it started deflating immediately. after cutting it open i felt wet dough on the inside… UNDERBAKED. choux pastry is meant to be dry and light; should be completely hollow on the inside
success 3:
the burst of high heat at the beginning helped my dough rise/take shape, then the reduction of heat allowed my dough to bake all the way through without over baking or bake toooo fast. I think this works best for my home oven because the temperature is so finicky. in a commercial oven i think 350° all the way through could work which was the bake time i was using originally

Another common issue is underbaking, resulting in wet or soggy interiors instead of the ideal dry, hollow shells. Using a toothpick to test doneness or baking a bit longer can help ensure the moisture evaporates fully. If your choux collapses when out of the oven, it’s usually a sign the interior wasn't baked through completely. Overall, I encourage embracing the experimentation process — it’s how I improved my pâte à choux. Each oven is unique, so adjusting times and temps is a personal journey.
