GF/DF NO BAKE CHEESECAKE BITES

No bake GF/DF mixed berry cheesecake bars 🍰

These cheesecake bites are gluten free, dairy free, are sweetened with dates and coconut sugar and require zero baking!

I know you’ll immediately think that there’s no way cashews could have a cheesecake texture…but don’t knock it til you try it. 😋

INGREDIENTS:

Crust:

* 3 cups simple mills honey & cinnamon sweet thins

* 1/8 cup maple syrup

* 1/8 cup almond butter

* 4 pitted deglet dates

* 2 tbsp almond milk

Filling:

* 3 cups of cashews

* 2 tbsp coconut sugar

* 2 tbsp juice from a lemon

* Optional: add 1 tbsp nutritional yeast

Topping:

* Mixed berry chia seed jam (I’ll share this recipe separately but it’s also shared on my stories).

You can keep stored in the fridge for up to three days. Enjoy! 🫶
