For us, a huge part of honoring this day is through food, and nothing says tradition quite like a hearty breakfast of breadfruit, okra, and saltfish. I remember waking up early, the aroma of saltfish simmering and breadfruit roasting filling the air. This dish isn't just about delicious flavors; it’s a culinary journey back in time, connecting us to our ancestors and their resilience. Preparing it is a labor of love, but it's truly worth it. If you're new to cooking with breadfruit, don't be intimidated! I've found that boiling it until tender, then lightly frying or roasting it, brings out its unique, slightly starchy, and subtly sweet flavor.
